Aebleskivers in the AM


Oh what a week!  After waiting so long for the Olympics to start, I find that life has a way of asserting itself and making it impossible for me to sit unbothered on the sofa for hours on end watching sport.  What a surprise.  Thank goodness for DVR.  I have been able to capture all the hours of Olympic goodness and watch them later.  I was impressed with the opening ceremony last night.  What a spectacle!  President Putin is doing a good job of making sure we all know that Russia is more than just the Cold War image many of us have lingering in the recesses of our minds somewhere.  It really is a wonderful opportunity for Russia to stand up proudly and say "Look at Me!"

Speaking of "Look at Me!"  Let's talk about outfits.  I was watching last night with a friend from Germany, and as the German team emerged from the tunnel, all she could say was, "Oh Germany, no!  Why?  Germany NO!"  I have to agree.


Not so stunning uniforms being sported by the Germans and the Americans.  Sigh.  They could have done so much better.  They only had to ask for my opinion.  ;)



I picked a few of my favorite uniforms:

Poland with their subtle snowflake design and muted colors

Canadians seem to be consistently snappy dressers ~ love the red toggle coat

These Russian fur coats were cool.  I liked their hats and scarves too.
Uniforms Aside: Personal Favorite Opening Ceremony Moment ~ The ballet.  I could have watched that part for hours.  Beautiful music, beautiful movement.  I was nodding in agreement when the announcers last night mentioned that out of Russia's tumultuous past came some of the most beautiful music, dance and art.  I look forward to the next 16 days to hear the athlete's stories and see the competition unfold.  What an epic and uplifting way for the world to come together.  


Changing Gears and with a nod to our Danish forefathers (and mothers)


I was feeling especially ambitious this morning, and decided to make Aebleskivers for the girls.  I got done, and wondered why I thought this was so ambitious.  It really didn't take very long, and the cleanup was akin to making pancakes.  The kids love them, and they are fun to make.

I blend it all in a blender and then whip the egg whites separately and fold them in before pouring the batter into the wells of the Aebleskiver pan.  

Unfortunately the chickens are not laying much this winter and I had to use store bought eggs -  boo.


Here's the recipe I use.  Found in the little book, "From Danish Kitchens"


Cook long enough to make sure they're done in the middle, turn frequently.



Turned in the pan, and skewered when done, by a thin knitting needle.  The traditional Danish way.

Traditionally served with Raspberry or Lingonberry Jam and powdered sugar.

What a yummy way to finish off a busy, but fun week.  I look forward to much more couch time to come,  but not tonight.  I'm going to a dance concert with a friend, so it looks like the DVR will have to be pressed into service once again.
